We just threw a big surprise birthday party for my momma and a huge bowl of caesar salad was on the menu! This caesar salad is made without raw egg and adding the anchovy paste is optional. It’s super easy and tastes way better than buying the store bought stuff!
In a food processor, combine 1 cup greek yogurt, 1/2 cup mayonnaise, 1/4 cup grated parmesan cheese, 2 cloves of garlic, 1 teaspoon salt, 1/2 teaspoon pepper, juice of one lemon. As it is pulsing, pour in a 1/4 cup of olive oil! You can also add 1/4 teaspoon of anchovy paste. This makes enough salad dressing for a party of 4. We love bringing this dip with veggies in our lunch too!
- 1 cup greek yogurt
- 1/2 cup mayonnaise
- 1/4 cup grated parmesan cheese
- 2 cloves of garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- juice of one lemon
- 1/4 cup of olive oil
- Combine all ingredients in a blender. Serve with chopped romaine, croutons, and shaved parmesan!
