I’ve loved broccoli since birth, weird I know. Wouldn’t touch potatoes until I was 8 but would eat broccoli anyway you gave it to me!
Luckily you can find broccoli in most farmer’s markets right now, so it is a perfect time to serve broccoli simply with just a few ingredients!
This broccoli dish looks elegant, but it is super easy to prepare and comes together in just a few minutes!
Start by preheating the oven to 450 degrees. You want it nice and hot in order to roast the broccoli properly.
Chop the broccoli into small florets and toss them in 1/4 cup of olive oil and salt and pepper. Place in a shallow dish and spread the broccoli out so that they are not crowding each other. Bake for 5-7 minutes, keeping a close eye on the oven, so the broccoli does not burn.
Pull it out, squeeze a few lemons over it and top with parmesan cheese! It’s that easy!
I can’t guarantee that it will convert non broccoli lovers, but it will definitely make broccoli lovers happy!
- 2 large crowns of broccoli, chopped into small florets
- 1/4 cup of olive oil
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 cup parmesan cheese
- juice of 1 lemon
- 1. Toss broccoli in olive oil and salt and pepper and place on a large sheet pan. Roast the broccoli at 450 degrees for 5-7 minutes.
- 2. Squeeze lemon juice over the top of the broccoli while it is still warmed. Sprinkle parmesan cheese over the top and serve!
